Chilli Flakes are usually used in cooking pastas, soups ,pizzas and sausages etc..whereas in India ,specially in Andhra pradesh, they are used in cooking vegetable fries like bhendi fry, tindora fry, cluster beans fry etc…
These chilli flakes are called as GODDU KARAM in Andhra Pradesh. Andhra people use freshly pounded chilli flakes for seasoning vegetable fry recipes. Nice aroma of curry leaves, pungent flavor of garlic and spiciness of red chillies enhances the taste of the recipes. and tastes even better when pounded in stone mortar with pestle. it is prepared in very small quantities at a time. as curry leaves and garlic contains little moisture.
Using stone mortar is a dream for city people as we live like caged birds. and the birds in the ground floor could not bear the sounds 😉 🙂 . but i have a very small stone mortar.
