Gongura Chicken Curry

Ingredients

For Gongura paste

  • 150 grams gongura/kenaf leaves/ambadi
  • 1 medium-sized onion
  • 3 - 4 green chilies
  • 1/4 cup roasted cashew nuts

For curry

  • 600 grams chicken
  • 200 grams chopped onions
  • 2 green chilies
  • 1 sprig curry leaves
  • 2 tsp ginger garlic paste
  • salt as per the taste
  • 1/2 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/3 cup roasted cashew nuts
  • 5 tbsp to 6 oil

Instructions

Step 1 - Roasting cashew nuts

  1. heat 2 tsp of oil in a pan, add cashew nuts and roast until golden color.

Step 2 - Making Gongura paste

  1. heat 3 tsp of oil in a pan, add green chilies, small onion cut into pieces and gongura/kenaf/ambadi leaves.
  2. saute on low heat until the leaves shrink.
  3. let them cool down to room temperature.
  4. grind it into a paste adding 1/4 of roasted cashew nuts and keep aside.

Step 3 - Cooking chicken curry

  1. heat 5 to 6 tbsp of oil in the same pan.
  2. add finely chopped onions, green chilies and saute until soft.
  3. add 2 tsp of ginger garlic paste, curry leaves, and fry until the raw flavor disappears.
  4. then add the chicken and mix well.cover and cook on medium heat for 5-7 minutes.
  5. open the lid, mix the chicken for once, add salt, turmeric powder, red chili powder, coriander powder and mix again.
  6. cover and cook until the chicken is 95% done.mix in between.
  7. later open the lid, add gongura paste, garam masala and mix well.
  8. cover and cook for 5 minutes on simmer.
  9. add cashew nuts and turn off the heat.
