Pepper Chicken Dry

Ingredients

For Marination

  • 500 grams chicken
  • 1/2 tsp turmeric powder
  • 1 tsp salt
  • 1 tbsp pepper powder
  • 1 tsp ginger garlic paste
  • 1/4 cup yogurt
  • 2 sprigs curry leaves

For Masala

  • 2 tbsp coriander seeds
  • 3 cloves
  • 2 cardamom pods
  • 1-inch cinnamon stick
  • 1 petal star anise
  • 1/2 tsp fennel seeds
  • 1/2 tsp poppy seeds
  • 1 tsp coconut powder

For the Curry

  • 2 medium onions paste
  • 4 green chilies
  • 1 tbsp ginger garlic paste
  • salt as per the taste
  • 1 tbsp chicken masala
  • 2-3 tsp pepper powder
  • 1 sprig curry leaves
  • 1/4 coriander leaves
  • 1/4 cup oil

Instructions

Marinating the chicken

  1. take the chicken in a mixing bowl, add turmeric powder, salt, pepper powder, ginger garlic paste, yogurt, curry leaves and mix well.
  2. leave the marinade for 30 minutes.

Preparing Masala

  1. heat a pan, add coriander seeds, cloves, cardamom, cinnamon, star anise petal, fennel seeds and roast for a minute.then add poppy seeds, desiccated coconut powder, and roast for 15 seconds.
  2. put them in a grinder and make into a fine powder.

Preparing the curry

  1. heat oil in a pan.add onion paste and saute for 2-3 minutes.
  2. add ginger garlic paste and saute for a minute.
  3. add the chicken marinade, mix well and cover it with a lid and cook for 15-20 minutes on medium flame.
  4. remove the lid and mix for once.
  5. add chicken masala, pepper powder, mix well and cook for 5-7 minutes.
  6. add slit green chilies, curry leaves.
  7. then, add roasted cashew nuts and chopped coriander leaves and turn off the flame.
