For Marinating the Chicken

  • 500 g chicken
  • ¼ tsp turmeric powder
  • salt as needed
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp white pepper powder
  • 3 cloves
  • 4 cardamoms
  • 2 cinnamon sticks
  • 1/8 piece of a nutmeg
  • ½ flower mace
  • 2 bay leaves
  • 1 tsp ginger garlic paste
  • ¼ cup thick yogurt

For Cooing Kasuri Methi Chicken curry

  • 3 medium finely chopped onions
  • 3 slit green chilies
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • salt as per taste
  • 1 tsp red chili powder
  • ¼ cup Kasuri methi/dried fenugreek leaves
  • 6 cashew nuts
  • 3 tbsp oil
  • 20 g butter
  • ¼ cup fresh cream
  • ¼ cup chopped coriander leaves


Marinating Chicken

  1. rinse chicken thoroughly and take into a bowl.
  2. add turmeric powder, salt, red chili powder, coriander powder, pepper powder, bay leaves, nutmeg, mace, cloves, cinnamon, cardamom, ginger garlic paste, yogurt and mix well.
  3. soak the marinade for 30 minutes.
  4. Meanwhile, you can make other preparations.

Soaking and grinding cashew nuts

  1. soak 6 cashew nuts in water for 20 minutes and make them into a paste adding some water.

Preparing Kasuri Methi for the curry

  1. I have followed the instructions given on the packet.
  2. boil some water and turn off the heat.
  3. add salt, Kasuri methi and soak for 2-3 minutes.
  4. Strain out the water from Kasuri methi and keep aside.

Preparing Kasuri methi Chicken curry

  1. heat a pan, add oil and butter and wait until the butter melts.
  2. add chopped onions and green chilies, salt and sauté until they become soft.
  3. add ginger garlic paste and sauté until the raw flavor disappears.
  4. then add a pinch of turmeric powder, red chili powder and give it a mix.
  5. put the chicken marinade and mix well.
  6. cover it and cook on medium heat for 20 minutes.mix in between.
  7. After 20 minutes, add cashew nut paste, soaked Kasuri methi, cream and mix well.
  8. add one cup of water and bring to a boil.
  9. When the curry starts to boil turn it to simmer and cook until the gravy thickens.
  10. add chopped coriander leaves and turn off the heat.
