Take a mixing bowl, add grated beetroot, carrots, crushed green peas, chopped coriander, mint leaves, chopped cashew nuts, mix well and keep aside.

Grease the idli pans with a little olive oil or ghee or butter

Put 1 tbsp Idli batter in each mould.

Put a generous amount of veg mixture on the batter and cover each with 1 tbsp of batter again.

You can top it with some veg mixture again.

Stack the plates on the stand keep in Idli cooker/steamer pot.

Cook on a medium flame for 12 minutes and 2 minutes on slow flame and turn off the flame.
