Vegetable Pulao recipe

                Vegetable pulao is a rice item cooked with a combination of selected spices and vegetables of our own choice.It tastes good when served with veg or non-veg gravy curries.It can be cooked in two ways.you can add pulao masala(powder made from selected spices like fennel seeds,cinnamon,cardamom,cloves,star anise,black pepper etc….) or you can directly add whole spices.I prefer doing it this way.

the outcome of this recipe depends on how you cook the rice.if you are using Basmati (long grained rice) the ratio of rice and water should be in 1 : 1 1/4 ratio. for normal rice the ratio should be 1 : 1 3/4. you need to soak the rice for atleast half an hour. i have used carrots,capsicum,potatoes,green peas.you can add even more vegetables like cauliflower florets,french beans,mushrooms etc.. …but not the bittergourds  😉 🙂 🙂 .

Vegetable Pulao

Ingredients
  • Basmati Rice- 500 grams
  • onions( thinly sliced ) -2 medium
  • sliced green chillies-3
  • potatoes- 2
  • green bell pepper-1
  • green peas-1/4 cup
  • carrots(chopped)-2
  • yogurt-1/4 cup
  • ghee-1 tbsp
  • oil-4/5 tsp
  • mint leaves – 4 sprigs
  • salt-to taste
  • WHOLE SPICES
  • cinnamon sticks- 2
  • cardamom-6
  • cloves-6
  • bay leaves-2
  • star anise-1
  • mace-1
  • black pepper-1/4 tsp
  • shahi jeera-1 tsp
  • fennel seeds-1tsp
Instructions
FOR MASALA
  1. dry roast fennel seeds and cardamom till you get a nice flavor.
  2. put them in a spice grinder and make them into a fine powder.
Cooking Vegetable Pulao
  1. soak basmati for half an hour.
  2. heat a thick bottomed vessel
  3. heat oil,ghee/clarified butter,add whole spices and fry them for 30 seconds.
  4. add chopped vegetables and saute till they become transparent.
  5. add ginger garlic paste and saute till the raw flavor is gone.
  6. add salt,fennel and cardamom powder,yogurt and saute for a minute.
  7. next pour water and bring to boil.
  8. when the water starts to boil add soaked Basmati Rice.
  9. water stops to boil after adding rice,so bring it to boil.
  10. again when it starts to boil,turn the flame into simmer and cook on low heat until the rice is perfectly done.
