Chicken ghee roast is a spicy and tangy Mangalorean delicacy. I never heard of this recipe until one of my subscribers on YouTube asked me to  post this recipe. googled for the recipe and got it finally. the taste was outstanding.

I didn’t feel any taste while cooking… but it tasted really amazing few minutes after i switched off the heat .I have used Kashmiri chilies for preparing masala. They weren’t as spicy as the seem. they give a nice color to the recipe…. ghee/clarified butter enhances the taste ……don’t hesitate to use ghee… I agree it is little more than usual…. but it is a must try recipe. the proportions I used are perfect.but you can make adjustments according to your taste. Chicken ghee roast Mangalorean style recipe

Ingredients
  • For marination
  • chicken(thigh cut)- 600 grams
  • turmeric powder – 1/4 tsp
  • salt – 1 tsp
  • red chilli powder – 1 tsp
  • pepper powder – 1/2 tsp
  • ginger garlic paste – 1 tsp
  • lemon – half
  • yogurt – 1/2 cup
  • For Masala paste
  • pepper corns – 1/2 tsp
  • coriander seeds – 1 tbsp
  • kashmiri red chillies – 10 or 12
  • cumin seeds – 1/2 tsp
  • fennel seeds – 1/2 tsp
  • tamarind – small lemon sized
  • garlic cloves – 5
  • water – little
  • For chicken ghee roast
  • ghee/clarified butter – 5 or 6 tbsp
  • onions – 2 medium
  • turmeric powder – 1/4 tsp
  • ginger garlic paste – 1 tsp
  • curry leaves – 1 sprig
  • salt – to taste
  • coriander leaves – 1/4 cup
Instructions
Marinating Chicken
  1. take a bowl,add chicken,turmeric powder,salt,red chilli powder,pepper powder,ginger garlic paste,lemon,yogurt and mix well.
  2. leave the marinade for 30 minutes.
Preparing Masala
  1. heat a pan,add pepper corns,coriander seeds,kashmiri red chillies,cumin seeds,fennel seeds and roast until a nice flavor comes out.
  2. add garlic cloves,tamarind and sauté for a minute.
  3. let them cool down then make into fine paste adding some water.
Cooking Chicken ghee roast
  1. heat a pan,add 5 or 6 tbsp of ghee.
  2. add chopped onions,salt and sauté until soft.
  3. add turmeric powder,ginger garlic paste,curry leaves and sauté until the raw flavor is gone.
  4. add the chicken marinade and mix well.
  5. cover and cook for 15 minutes on medium heat.
  6. remove the lid,add chicken ghee roast masala paste and mix well.
  7. cover and cook for 10 minutes.
  8. later open the lid and cook until you get the desired consistency.keep stirring gently.
  9. add chopped coriander leaves and turn off the heat.
