Okra is high in fiber, vitamin A, vitamin c, and Magnesium etc..Our elders used to say that if you eat okra you can do Mathematics better. Okra tomato curry is one of my husband’s favorite recipes. All his favorites bring a headache to me(just kidding). I’m too lazy to rinse and clean okra. so I always rinse them on before night, cut them and keep in the refrigerator. This saves a lot of time on the next day morning.

When I was a child, one day my mother asked me to pick okras, which were grown in our backyard. I was totally unaware of spines on them. Immediately I got rashes and was totally afraid. My mother applied some oil to my hands. Soon they got disappeared. So it’s better to wear gloves until you have added it to your dish (in case if your skin is sensitive). in the video version, you can see me picking okras which were grown at our farm-house.

few instructions to get a perfect bhindi tomato curry. First, we need to rinse them thoroughly and pat them dry. if they are wet you will get more gum while cooking. cut okra into slices spread them on a paper or a dry cloth and leave them for 1 or 2 hours. If you have no time in the morning you can cut them on previous day’s night and keep in the refrigerator. add 1 tbsp yogurt or buttermilk to reduce the gum while cooking okra. don’t overcook okra.

Ingredients
  • 500 grams Okra/Bhindi
  • 250 grams tomato
  • 2 onions chopped
  • 2 green chilies
  • 1 tbsp ginger garlic paste
  • ¼ tsp turmeric powder
  • 1 ½ tbsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • ¼ cup coriander leaves
  • 6 to 7 tbsp oil
Instructions
  1. put oil in a pan. add okra pieces and shallow fry them until they become soft and take them out of the pan. Do not use the ladle to mix. just toss the pieces.

  2. In the same pan, put some oil. add chopped onions, green chilies, salt and sauté till they become soft.

  3. add turmeric powder, ginger garlic paste, chili powder, coriander powder and mix well.

  4. add tomato pieces and cook until they turn into a thick gravy.
  5. later, add fried okra and mix it gently. cook until the oil oozes out.

  6. add coriander leaves and turn off the flame.
