Broad beans fry -quick and easy chikkudukaya iguru recipe

Broad beans are very nutritious.they are rich in protein,dietary fiber,antioxidants,vitamins and minerals….Indian broad beans look different from Fava beans or normal broad beans. I have prepared broad beans fry with a special homemade seasoning powder which is popularly called as Goddu karam(chilli flakes) in Andhra Pradesh. Goddu kaaram is made of dried red chillies,garlic,cumin seeds and curry leaves.this seasoning is used in fry recipes like broad beans fry,ivy gourd fry,okra fry etc…… This recipe goes well with hot and rice and ghee.. Broad beans fry – quick and easy chikkudukaya iguru recipe

Ingredients
  • For Seasoning
  • dried red chilies – 3
  • curry leaves – 1 sprig
  • cumin seeds – 1/2 tsp
  • garlic cloves – 3 or 4
  • For Broad beans Fry
  • Indian broad beans – 150 grams
  • water – to boil the beans
  • oil – 3 tsp
  • mustard seeds – 1/2 tsp
  • cumin seeds – 1/2 tsp
  • chana dal/split bengal gram – 1/2 tsp
  • dried red chili – 1
  • turmeric powder – a pinch
  • salt – to taste
Instructions
Unstring the beans
  1. take fresh broad beans,pull off the strings on both sides.
  2. open each pod and check whether they have any worms.
  3. wash thoroughly and keep aside.
Boiling broad beans
  1. fill half of the vessel with water.
  2. add broad beans,and bring the water to boil.
  3. when it starts to boil,add enough salt to make the water salty.
  4. boil for 10-12 minutes from the boiling point.
  5. turn off the heat and strain out the water from beans.keep aside.
Preparation of Seasoning
  1. heat a pan,add 3 dried red chillies,1 sprig of curry leaves,4 garlic cloves and 1/2 tsp cumin seeds.
  2. sauté for a minute and make into coarse powder.
Cooking Broad beans Fry
  1. heat 3 tsp of oil in a pan,add mustard seeds,cumin seeds,chana dal/split bengal gram,black gram/urad dal, 1 dried red chilli and fry until they stop sizzling.
  2. add boiled broad beans,turmeric powder,seasoning powder.
  3. fry for 5 minutes on low heat and switch off the heat.

    Dear Bindu,

    I have been following your blog for sometime now and love your presentation. Your style of cooking is very close to my mom’s and I thoroughly enjoy your meticulous posts.

    This best chikkudu variety! Brought back memories from childhood. I wish, I could get the seed. May be next time when I go home and if I am lucky.
