Pesarattu upma/Upma with moong dal dosa is a popular breakfast recipe of Andhra Pradesh.when I was a child we used to go to our paternal grand parent’s village on vacation.there they used to serve ghee roasted pesarattu and ghee upma on either banana leaf or Badam leaf.I still remember that heavenly taste.those days will never come again :(.

I prepared this dosa with sprouted green gram.you can also prepare the same recipe with soaked green gram.but sprouted green gram has more nutritional values than the normal green gram.few people may have trouble eating sprouted green gram directly.so they can make dosa batter with them.you can make oats upma to make the dish more healthy.in Andhra upma and moong dosa are served together.that’s a great combination.I hope you try and enjoy this healthy recipe.

Healthy South Indian Breakfast Recipe Pesarattu made with Sprouted Green gram, oats, and soaked rice

Ingredients
For Soaking
  • 1 cup Green gram/Moong Dal
  • 1/2 cup rice
  • enough water soaking
For Batter
  • 1 cup oats
  • 1 inch ginger
  • 1 green chili
  • 1/2 tsp cumin seeds/jeera
  • salt as required
For Stuffing
  • 1 medium onion chopped
  • 2 carrots grated
  • 1/4 cup coriander leaves chopped
  • 1/2 inch ginger chopped
  • 1 green chili chopped
  • 1 tsp oil
For Making (one) Dosa
  • 1 tsp oil
Instructions
Soaking & sprouting green gram
  1. Soak 1 cup of green gram in the morning.

  2. Soak them till evening and strain out the water.

  3. Keep them in a cloth or colander and cover with a lid and leave overnight.

  4. By morning the green gram will start sprouting.

  5. Meanwhile, soak ½ cup rice for 3 to 4 hours.

  6. By the time the rice gets ready the green gram sprouts even more.

Grinding the Batter
  1. Put the sprouts, soaked rice, oats, green chili, ginger, cumin seeds, salt in a grinding jar and pour water up to the level of the ingredients.

  2. Grind it into a batter adding some water if required.

  3. You can use the batter immediately.no fermentation is required.

Sautéing
  1. Heat 1 tsp oil in a pan.add chopped carrots, onion, green chilies, ginger, coriander and saute for 2 minutes and keep aside.

Making Dosa
  1. Put 2 spoonfuls of batter on the pan and spread it into a round shape.

  2. Add 1 to 2 tsp of oil around the edges of dosa and roast until it turns brown.

  3. put sautéed onions mixture on dosa and fold it.

  4. Serve hot with upma, coconut chutney or sweet ginger chutney.
