we used to eat a lot of mangoes in our childhood. sometimes our granny used to stop us eating mangoes saying that they generate heat in the body. but we never followed her words. now I don’t have any interest in Mangoes. Not only me I think everyone feels the same about Mangoes as they are artificially ripened and tasteless. The Government has banned the use of Calcium Carbide. but I’m sure that the people find another way to ripen them artificially.

My daughter asked me to make Mango Ice Cream.we bought few Rasalu and Banginapalli(I don’t know whether they have any English Names or not as they were originated in Andhra Pradesh) Mangoes. Rasalu were too sour(they actually need to be very sweet after ripening) and Banginapalli were tasteless and flavorless. So I had to buy ready to use mango pulp from the supermarket. I bought Alphonso Mango Pulp and it was too good and very flavorful. I made Ice Cream with that pulp and turned out very tasty. My daughter liked it.

This is a very simple and easy three ingredient Ice Cream Recipe. can be prepared within 15 to 20 minutes. but it has 8 to 10 hours of resting time. I mentioned vanilla essence in the ingredients below. but it’s an optional ingredient. Fortunately, if you find good mangoes then you don’t need to add any artificial flavor. The natural flavor in the mangoes tastes good. coming to the recipe, you need to whip medium-fat cream for 2 minutes. sweetened condensed milk and mango pulp are to be added next and whipped for just 2 minutes. If you whip for more time the mixture turns fluffy and holds air inside. it may not get creamy texture though it is kept in the freezer.

you need to mix the ice cream mixture every two hours to avoid watery ice crystals. once the ice cream is ready you can serve immediately. you need to dip the scoop in normal water and then scoop out the ice cream into the serving bowls. top it with roasted nuts and chocolate syrup. as of this recipe, the most difficult and annoying part is taking Photos. The weather was too hot and the ice cream was melting before I take pictures. OMG! Only me and the God knows how I managed to click at least them. anyway, I hope you definitely try and enjoy this super Summer delight “Mango Ice Cream”.

Ingredients
  • 250 grams Mango Pulp
  • 200 grams cream Medium-Fat
  • 200 grams sweetened condensed milk
  • 1 drop vanilla essence
  • A pinch of lemon yellow food color ( optional)
  • ¼ cup roasted nuts
Instructions
  1. take fresh cream into a mixing bowl.
  2. Whip for 2 to 3 minutes.
  3. Add sweetened condensed milk and whip for 2 minutes.
  4. Later, add mango pulp and mix for 1 to 2 minutes.
  5. Transfer the mixture to a freezer safe bowl and keep in the freezer for 8 to hours.

  6. Mix in every 2 hours.
  7. Dip the scoop in normal water and scoop out the ice cream into serving bowls.
  8. Top it with roasted nuts and serve.
